Okay, so that's narrowed down the options.
Well, let's look at them one by one...
1) Dwarves - As discussed, they make a very formidable gunline; arguably the best in the game. They have very solid armour saves, are survivable, and boast strong anti-magic. Their leadership is fairly high across the army, and means they are fairly reliable too. However, if you aren't that into the idea of gunning your opponent down, why not try something a little different? Big blocks of warriors, hammerers and ironbreakers could work, with support from rangers, gyrocopters and the likes. Or, you could go slayer-heavy, led by a Daemonslayer or something? The diversity is there in the Dwarf army, it's just people do get suckered into the cookiecutter lists.
2) Warriors of Chaos - In my honest opinion, they are the solid choice out of the ones you are interested in. They genuinely have it all; fantastic armour saves, great magic ability, awesome in combat. But, best of all, the army is as diverse as they come. Fancy going Mono-God? Sure! Fancy a bit of all four? Go for it! The possibilities are really endless in the army book, and it is hard to build a bad list. The only thing they lack, is any decent amount of shooting, outside of the Hellcannon. But, you seemed anti-mass-shooting, judging by the Dwarf response, so that shouldn't be an issue. WoC aren't going to be breaking the meta game any time soon, but they are very solid.
3) Daemons of Chaos - Are one of my favourite armies. It is next to impossible to write a bad list for this army, and I have often found it more difficult to lose with Daemons than to win with them. The models are great, and with the new releases there hasn't been a better time to start them (particularly with some decent savings on the new models on some sites). The mediocre save isn't too mediocre, giving you a 1-in-3 chance of saving every wound, rarely negated bystuff your opponent will bring.
