Also does anyone field models with just a club and the other weapon or Ironfist left off the kit?
I know they can be fielded with the weapons on the model and not counted as being in use, but if I were to field them with just a club, I'd probably clip the other weapon off just to avoid complaints from Tourney win at all cost types.
To address this for you, I'll let you know right now that you do not have to "clip off" anything on an Ogre's left hand to be tournament legal.
Ogres come in their boxes/kits with no option to have an empty left hand and Tournaments do not punish players for the way a model is forced to look like. Now, if a model could have two different options (Such as Helberds or Hand Weapon + Shield) then you do need to model them accordingly.
Likewise with the Ogres, if you want to field them with Ironfists then you need to have at least half of the unit modeled with the ironfist and place those modeled with the ironfist front and center so that your enemy can see what their equipment is. Also, if you don't want to pay for the ironfist (Why on God's Green Earth would you do that I don't know!?), then you need to model at least half of the ogres in your unit without the ironfist.
In regards to the second hand weapon? You can model it on, but never off, as Ogres come with either 2 hand-weapons or 1 hand weapon and an Ironfist. There isn't any other way to model it.
So in-short, the only "modeling" that actually matters to Ogres in a tournament setting is the Ironfist. You can't model an Ogre without an extra handweapon thus you don't have to worry about how its modeled with or without extra hand weapon.
